The heat takes a few seconds to kick in, and then builds for the next few minutes. This is going to be a little more heat than some people like. For heat lovers, it’s not a “call the fire department” kind of heat.  Along with the heat comes the flavor of the ghost pepper, which is very earthy.  Try a little paprika straight out of the spice jar on your tongue to get an idea of the earthy taste.  That’s another thing some people may not like. It is a different flavor.

While all the TJ flavored cheddar combinations reviewed so far, e.g., caramelized onion cheddar, have been more than good, this one doesn’t work for me. The combination of the cheddar, and both the heat and flavor from the ghost pepper just doesn’t work well together. Aside from the ghost pepper overwhelming the cheese, the flavors just aren’t complementary. Perhaps as a topping for a burger, this may work better.

This is a very nice cheese with a very good flavor. The cheese is sharp, but I wouldn’t call it extra sharp as the label does. The cheese is nicely aged to a crumbly consistency.  The cheese should be good for cooking as it melted nicely with a quick microwave test.  Per the label, the cheese is produced by a farmer’s cooperative, which is nice to know in this age of mega-scale industrial food production.  As a domestic cheese from the Northeast, it’s reasonably priced to boot.

A cheddar with hints of an aged Gouda?   This is a fine tasting, slightly crumbly, but still creamy in the mouth, cheese.  While the length of aging of this cheese is not specified on the label, it’s just on the verge of developing those cheese crystals like an aged Gouda.  This is a “mature” tasting cheddar, meaning it’s not a mild cheddar.  But it’s also not a sharp cheddar. It’s an extremely nice and enjoyable cheese.

Collier’s refers to Welsh miners, called Colliers (think “coal ers”). The miners used to take this cheese down in the mines for lunch.  And for an interesting movie, based on real events in 1984, explaining how these same miners found common cause with a seemingly unlikely group, try Pride (2014) while you snack on the cheese.

This is another one where it would be way too easy to eat the whole package in one sitting.  A very little bit of a smokey peppery earthy taste mixed in with creamy, but not soft, English cheddar is the best description I could come up with.  That description doesn’t do it taste justice.  It may not be to everyone’s liking, but this is very good.

Of particular note are a couple of the lesser ingredients, anchovy and bamboo fiber.  What’s This For?  Well I sure don’t know, but whatever the reason the whole seems to work just fine.

At $9.99 per pound, this is in line with similar cheeses at Trader Joe’s.  The calories, at 110 per ounce (28g), are also similar to other cheeses.

I couldn’t find the bacon cheddar, but I did find this.  I’m not disappointed.  A crumbly, little bit sharp, nice cheddar cheese forms the base of this product.  To it is added caramelized onions.  That may not sound good, but it is good – really good.  The onions add a contrasting sweetness to the more earthy taste of the cheddar.  It’s a nice flavor treat for the mouth.  For a modest price, this is a nice cheddar cheese with an interesting contrast that works well.   Price $8.99 per pound   Calories  110  per ounce (28g)

No, the label has not been photoshopped.  The cheese has a strange taste to be sure.  There’s a little bit of apple taste at first followed by a mild cheese taste followed by a little bit of sting on the tongue.  The consistency is similar to a Muenster cheese, semi-soft and somewhat crumbly.  This is not unpleasant overall and certainly very interesting.  In fact after getting over expectations of what a cheese should be, it’s hard to stop eating.   This is sure to be a conversation starter at any gathering.  And if you’re by yourself, it’s likely to start a self-conversation.

Trader Joe’s English Coastal Cheddar

This is a very fine cheddar cheese imported from England (Dorset coast).

The cheese has a pale off-white color, not the usual yellow color found in US produced cheddar.  This is not a “hard” cheese.  It’s relatively easy to cut and a little crumbly.  The cheese has a nice nutty flavor with a little bit of a tang.  It’s not a sharp taste as might be found in a New York sharp cheddar, but still a very flavorful cheese.   It reminds me a little of an aged Gouda, but not as hard.  Similar to an aged Gouda you can feel (and hear) a few little cheese crystals crunch between your molars as you chew. Because of the pale color it’s difficult to see them in the cheese.   I could easily get to like this.  And I do.
