Here’s the recipe that goes along with the review of Trader Joe’s Soy Chorizo. Simple but effective.
If you’ll remember, the basic quesadilla is a Mexican grilled cheese sandwich. But that doesn’t mean we can’t use other ingredients also. Here’s a quick quesadilla recipe named after an entrée at our local Mexican restaurant and using Trader Joe’s Soy Chorizo. TJ’s Soy Chorizo is labeled as vegan. You’ll need to substitute a vegan cheese in this recipe to stay vegan, or don’t use cheese.
Ingredients
8 oz of shredded cheese – Mexican blend or your choice
10 inch flour tortillas
12 ounces Soy Chorizo
1/2 onion, in fine slices or diced
salt
pepper
4 tablespoons olive oil
Directions
Cook the sausage. Saute onions, salt and pepper in olive oil over medium heat. Remove the sausage from the casing and add to the cooked onions. Continue to cook the sausage for about 5 minutes until heated through.
Heat a frying pan using medium-high heat. Spread a little olive oil in the pan. Place a tortilla in the pan. Toast one side of the tortilla until the top starts to ”bubble” up. Flip the tortilla over. Place about two ounces of the cooked sausage on one half of the tortilla. Add about 1 ounce of cheese along the rounded edge on the sausage half of the tortilla. Using a spatula, fold the tortilla over to form a half-moon shape. Press down on the tortilla so it doesn’t unfold. Flip the tortilla over and cover the frying pan for about 20 seconds to toast the other side of the tortilla and to melt the cheese. Remove from the pan. Serve with salsa and Mexican rice or your favorite side dishes.
